Well, this is take two for this post -I lost the original detailed one set to post this morning, oh well. So since it is our 6-year anniversary tomorrow, I am trying to get work done to spend quality time with my sweet husband! I am only giving you a portion of what I originally posted. I don’t have the energy or the time to redo all the details, but you can see in the pics the majority of what I got on our trips.
As I will say in my Menu Plan post on Monday, I am working on healthier diets for my family. For us that mostly means more fiber-rich foods, I was amazed at the lack of fiber in our diets when I started tracking it! That just means more legumes, and fruits and veggies, plus whole grain un-enriched types of products. This will be a fun challenge to keep it into my $40/week budget. I am also looking to the idea of getting a small grain mill and doing my own flour and grains, MUCH higher nutritional values!
Do you have any great tips or ideas on how I can add more fiber (true, not chemically included) into our diets? Any great recipes? I would love to hear your thoughts, those are usually the best ideas I get!

My Hungry Girl cookbook has a recipe for oven-“fried” chicken, where the breading is made from ground up Fiber One cereal. The Fiber One website also has a “haystack” (choc. drop “cookie”) made with their cereal that is GREAT and my son loves them. You’d never know they have Fiber cereal in them. I don’t eat the cereal itself but use it for cooking a LOT. Hungry Girl loves it and incorporates it into many of her recipes. I keep a ziploc of ground cereal all the time so I can add it as needed.
Gnu foods (gnufoods.com) has a variety of fiber bars, although they are $1.99 each and only usually found at “health food” stores. They are loaded with fiber!
